SACRA CONGREGATIO PRO DOCTRINA FIDEI
Facultas datur addendi certam succheri quantitatem ad vinum pro Sacrificio Missae firmis reddendum*
Preces – At times the grapes are poor of natural sugar so that fermentation may
produce a wine with alcohol content of only 5 or 7 percent, insufficient for the
stability of the wine in our (India) climate. Is it aloud to add sugar to the
must? An addition of 70 grams per litre of grape juice would raise the alcohol
content for the wine by 4 percent, which seems sufficient for the stability of
the wine.
Rescr. – This Sacred Congregation grants the permission asked for, on condition
that the quantity of sugar added to the must does not exceed 10 or 12 percent.
The sugar must be added before or during the fermentation.
